Not keen on early mornings
I do not like early mornings. I'm not talking 6 am, I mean 4:30.
After tossing and turning for an hour and almost getting back to sleep, it was time for the sun to come out.
Needless to say, now I am just beat!
I am so glad I have no young kids at home, so I can have a nap! lol

Long Weekend Fun
It was a busy last few days.
The weather was perfect as well. Three days of almost 30 degree.

Saturday we had a party for S, with some family and a few friends.
She got to see her cousin, who she hasn't seen since last summer.

On Sunday we packed a lunch and spent the afternoon at the park.

Today we had a quiet day, just hanging around home , and chatting with neighbors outside.
Hope you all had a great weekend.

Goings on from the last few days
The past few days, we've awoken to bright sunny mornings, and warm temps. The kind of days that you jump out of bed, and know it will be a great day.
Sunday was our library day (we go every 3 weeks on Sunday).
Afterward we went for a walk.
Bailey is like a kid running through the grass, playing in the dandelions.
Presents were opened in the morning, because it was a school day.

Monday was my youngest daughters' birthday.
After school, supper was pizza, then afterwards.................

it was cake.
I found the recipe for this cake at Amanda's blog. It IS the best chocolate cake I've ever had!

Tuesday was gorgeous outside.
Took a morning walk downtown to the waterfront.

Last night, we went for a short walk. We had came upon a ground hog the day before, and I wanted to try to catch a shot of him close up.
We grabbed some lettuce and carrots to take, to try to lure him out of his hole.
We eventually got a pic of him.

The best Blackberry Muffins ever
Years ago,(over 10) when my kids were younger, I used to bake a lot. Always using the same recipes given to me by my mother.
Over time, the baking slowed down, and some recipes were lost.
Lately I have renewed my love for baking, and as well, have more bravery, with trying new recipes I find.
The other day I did a search for Blackberry Muffins. (store had a sale and I bought lots).
I found a recipe.
Great recipe!
My 9 yr old, even likes them, and she is not a huge fan of blackberries.
I am going to make them again this weekend, and use blueberries instead of blackberries.
Blackberry Muffins Recipe
Ingredients
2 1/2 cups all purpose flour
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
1 cup sour cream
1 teaspoon milk
1 cup sugar
8 Tbsp warm melted butter (1 stick)
1 teaspoon vanilla
1 1/2 cups (about 5-6 oz) of fresh blackberries, cut in half , (you can use frozen blackberries if fresh are not available, defrost and drain them first.)
Method
1 Position rack in center of oven. Preheat oven to 400°F. Grease a standard 12 muffin pan or line with paper muffin cups. (Actually, with the berries you'll have more batter than just for 12 muffins. This batch made 18 muffins.)
2 Whisk together the flour, baking powder, baking soda, cinnamon and salt in a large bowl.
3 In a separate bowl, whisk together eggs, sour cream, milk, sugar, butter and vanilla.
4 Add the wet mixture to the dry mixture and mix together with a few light strokes, just until the dry ingredients are moistened. Add the berries. (If you are using frozen berries, defrost them first, then drain the excess liquid, then coat them lightly in flour.) Do not overmix! Overmixing will cause the muffins to be dense, not fluffy. The batter should not be smooth.
5 Divide the batter evenly among the muffin cups. Bake until a toothpick inserted into the middle of 1 or 2 of the muffins comes out clean, 17-20 minutes (or longer). Let cool for 2 to 3 minutes before removing from the pan. If not serving hot, let cool on a rack.
Serve as soon as possible, preferably within a few hours of baking.

Friday Rush...
Well here it is Friday, and this week (to me), has just flown by.
I am rushing around (in between writing this post), cleaning, doing laundry, and all that fun stuff we love to do.
Now that I have no small kids at home(either they're on their own, or in school, my youngest is almost 9), it's easier to get housework done, as there is no one under foot.
Fridays for me, are a preparation for the weekend. To spend time with my daughter, freely without home stuff to do. Weather its nature walks, or trips to the library. And with the warmer weather coming upon us, who wants to be stuck inside with your child, because you need clean clothes, or need to change a litter box, lol.

At one time, when I had 4 kids living at home, 3 in school, 1 a baby, I dreaded the weekends. It was hectic, noisy, and I pined for Mondays. Not now. I have learned to slow down and enjoy the weekends with my daughter. I guess with time, our routines will change, with the changes in our lives. You just need to find that balance, and do what works for you.
